I never used to like squash, I would eat around it if it was in my dish. Now I have learned to love it and I am so glad I have! It is so delicious when roasted in a toaster oven. I started making it this way and now I eat it several times a week because it’s so yummy and I know its good for me!
Squash has so many health benefits. It contains a lot of minerals our bodies need like, magnesium, potassium, copper, phosphorus, calcium, and iron. It also includes vital vitamins like A, C, E, and B6.
I feel good knowing it has very few calories and huge benefits. Squash is good for your immune system, eye health, bones, colon, and heart, just to name a few!
Roasting Squash in a Toaster Oven is really easy. Here’s what you need –
Vegetable Spray (I use coconut oil spray)
Salt (Himalayan Sea Salt is my favorite)
Yellow and/or Zucchini Squash
- Slice the Zucchini and/or Yellow Squash
- Spray the baking pan with olive oil or coconut oil
- Place the sliced Squash onto the baking pan
- Sprinkle Salt and Pepper on the Squash to your liking
- Set Toaster Oven to “Bake” mode and set to 425° F
- Bake Squash for 18 minutes
The finished product can either be a side dish or a delicious and healthy snack!
Okay, so cooking can’t always be healthy. Sometimes convenience wins! Here are some very easy things you can make in your toaster oven with very little or no prep at all. Most of these meals are also very inexpensive. Perfect for dorm room living and campers! Most of these can be cooked by using the same directions for the oven on the products labeling.

3. Pizza or Pizza Rolls – Make sure the Pizza is small enough to fit in the toaster oven
4. Frozen Waffles
5. Chicken Nuggets
6. Corn Dogs
7. Nachos – Grab some chips, add cheese, salsa and your favorite toppings! Best when broiled
8. French Fries – Frozen fries, or you can reheat them. I also love sweet potato fries!
9. Sausage – Fresh or Frozen
10. Quesadillas – Take a tortilla, add cheese and salsa, fold it in half and bake!

I had a nice Oster toaster oven that I loved, and I gave it to my son when he moved to college. During my home remodel, I needed a new toaster oven and I didn’t want to spend a lot of money. This toaster has done great for me, I am going to start reviewing more expensive toasters next because I would like to start cooking larger meals in mine. For a compact, starter toaster oven, you really can’t beat this one. I just checked on Amazon and it’s only $25
I made this quick and easy breakfast in my camper with my toaster oven. I found some fully cooked bacon at the grocery store in the freezer section. I found that the cooked bacon is really easy to make in the toaster oven with very little mess. I cook the bacon first, put it on top of the toaster to cool, then toast the waffles. Add some fruit to the waffles and breakfast is ready. I chose gluten free waffles, but you can use any brand of frozen waffles. My son loves making this breakfast in his dorm room.
Step 1 – Take the bacon out of the box and place it on the baking tray. You can use aluminum foil for a really easy clean-up.
Step 2 – Place the bacon in the toaster oven at 400° and cook for about 7 minutes or until it is to your desired crispiness.
Step 3 – Pull out the bacon and place it on the top of the toaster oven.
While the Bacon is cooling, you can start toasting the waffles. Take the toaster off bake mode and put it on toast mode.
Place the frozen waffles in the toaster for about 10 minutes. Remove the waffles, add some real maple syrup and top with fruit! Breakfast is ready!
Fully Cooked Bacon
I understand the importance of healthy eating. I have seen major improvements in mine and my families lives through the dietary choices we make. My son struggled with A.D.D. all through his childhood, and through clean eating I have seen huge improvements in his ability to focus. He recently went off to college to live in a dorm room and my biggest worry was his ability to eat healthy! I bought him a toaster oven and was on a mission to teach him how to cook healthy meals and lead a healthy lifestyle away from home. Some of my recipes are healthier than others, but hey they had to appeal to a college kid!
2 months after my son moved into his dorm room, I ended up living in a camper while my house was being remodeled. I had no idea I would live in this camper for 2 months, but that’s a whole different story. I bought myself a new toaster oven and let the experiment begin!
